Unlike many of Apple's other new and recent OS-level features, email sorting does not require a device that supports Apple Intelligence (typically Macs or M-series iPads), and is done entirely on-device . It is an optional feature and only available for English emails.
Apple released a third beta version of MacOS 15.3 just days ago, indicating that early developer-focused builds of macOS 15.4 with the sorting feature will be weeks away. While Gurman's newsletter suggests that email sorting will also appear in the Mail app for iPadOS, he didn't specify which version, although the timing would suggest that iPadOS 18.4 would arrive at about the same time.

Since then, Apple has separated aspects of Intelligence into various OS point updates. General ChatGPT access and image generation have arrived in iOS 18.2 (and related Mac and iPad updates), while notification summaries, which can be quite crude, are being rethought and better labeled and removed from certain news notifications in iOS 18.3 deleted.
